Summer Recipe: Spicy Black Bean Salad

Here's a great side dish.

 

A treat from Patch writer Stephanie Rex:

This recipe is more of a good combination of foods rather than a true recipe, but I loved it so much that I had to share it. While I used a mix of both canned items and fresh ones, you can choose to make it with any type of ingredients that you'd like.

Spicy Black Bean Salad

What you need:

  • 1 can black beans
  • 1 can Mexican-style tomatoes with green chiles
  • 2 corn on the cob with corn cut off
  • 1 cup fresh cilantro

What you do:

After chopping up the cilantro, mix all of the ingredients together in a large dish. This should provide about four people with a side dish. Serve and enjoy!
